Beverage Flavor Development

The largest flavor category and the least forgiving, because there is nowhere for a defect to hide.

What makes beverage flavor development difficult?

Drinks are the hardest thing to flavor. There is no fat to carry it, the acid breaks it down, and in most factories the drink is heated after the flavor goes in.

Everything that makes a drink a drink works against the flavor in it.

There is no fat to hold the flavor. The pH is usually between 2.8 and 3.6, which slowly breaks flavor down. The product is see-through, so any instability is visible. And in most factories the drink is heated after the flavor has gone in, not before.

The four things that make it hard

Getting it to dissolve. Most high-impact flavor ingredients are oil-based, and oil does not mix with water. You either use a water-soluble version — which limits what the flavorist can build with — or an emulsion, which brings its own problems. See flavor emulsions.

Acid. Low pH keeps the drink safe and gives it the tartness people expect. It also slowly destroys flavor. A drink that tasted right at the factory and tastes flat five months later has usually lost its top notes to acid, not heat.

Heat. Hot fill, tunnel pasteurizing, UHT — roughly in that order of damage. See heat stability.

Nothing to hide behind. Zero-sugar sparkling water is the extreme case: no sugar, no fat, no body, no color. Every flaw in the flavor is fully exposed, and you can taste dosing errors of a few parts per million.

What is changing

Sugar reduction is behind almost every reformulation. Taking sugar out removes sweetness, body, and the way sugar smooths off harsh edges. A reduced-sugar drink usually needs a different flavor, not the same flavor at a different level. See sugar reduction.

Function is where the growth is. Electrolytes, protein, caffeine, botanicals, fiber — every one of them brings a taste problem with it, and how you handle that decides whether anyone buys the product twice.

A sensible order of work

  1. Finish the base first — sweetener, acid, minerals, actives — before briefing any flavor.
  2. Test flavors in that finished base. Not in sugar water.
  3. Run shelf life at the real pH, in the real packaging, at the temperatures a truck and a warehouse will actually reach.
  4. Retest after any change to sweetener, acid or color. All three move the flavor.
