How is flavor developed for candy and confectionery?

In candy the flavor is the whole product. The hard part is heat: hard candy is cooked above 145 °C, which destroys most delicate flavors before anyone tastes them.

Nobody buys candy for its nutrition or its convenience. They buy it for how it tastes, which means the flavor has nowhere to hide and every production decision ends up being a flavor decision.

Heat is the main constraint

In hard candy the standard practice is to add flavor after the cook, at the lowest temperature you can manage, and accept that some of it still boils off.

Gelatin and pectin are different products

Gummy developers usually treat the gelling agent as a texture decision. It is also a flavor decision.

Gelatin melts at about body temperature and releases flavor gradually as it does. Pectin does not melt in your mouth, so it releases differently — usually tasting shorter and cleaner.

Which means: switching from gelatin to pectin for a vegetarian claim changes how the product tastes even if you keep the flavor identical.

Sour candy: design the acid and the flavor together

In sour confectionery the acid is not something added to the flavor. It is part of it.

  • Citric — sharp, immediate, fades fast
  • Malic — slower, and the sourness lasts through the chew
  • Fumaric — very strong, poorly soluble, used for coating the outside

If you design the sourness and the flavor separately, the product tastes like sour and then flavor, rather than one thing.

Surface acid also moves. A sanded sour candy loses its edge over time as the acid picks up moisture — a packaging problem that arrives looking like a flavor problem.
