Butterscotch vs Caramel: What Is the Difference?
The same pan and nearly the same ingredients, with a different sugar and a different stopping point. Toffee is the third member of the family.
What is the difference between butterscotch and caramel?
Caramel is white sugar cooked until it browns, usually finished with cream, while butterscotch is brown sugar melted with butter and cooked less, so it tastes of molasses and butter more than of burnt sugar. Toffee is butter and sugar cooked further, to the hard-crack stage, so it sets brittle.
All three start in a pan with sugar and dairy fat. What separates them is which sugar goes in and how hot it gets before it comes out. The temperatures below are the usual candy-making ranges; recipes vary by a few degrees.
| Caramel | Butterscotch | Toffee | |
|---|---|---|---|
| Sugar | White | Brown (white sugar plus molasses) | White or brown |
| Fat and dairy | Cream, often butter | Butter; cream for a sauce | Butter |
| Typical cook | Sauce: sugar taken to amber, about 170–180 °C (340–355 °F). Chewy candy: about 118–121 °C (245–250 °F) with cream | Candy: soft crack, 132–143 °C (270–290 °F). Sauce: far less | Hard crack, 149–154 °C (300–310 °F) |
| Where the flavor comes from | Browning the sugar, plus browning milk proteins in cream caramels | The molasses and the butter, with light browning | Butter and heavier browning |
| Key compounds | Furaneol, maltol, diacetyl and bitter, roasted browning products | Diacetyl and creamy lactones from butter, plus molasses notes | Butter notes over deeper roasted notes |
| Texture | Pourable sauce, or soft and chewy | Pourable sauce, or a firm candy | Brittle; it snaps |
Where each taste comes from
Caramel is made by the heat. Taken high enough, sugar breaks apart on its own, without any protein involved. That is caramelization. It produces hundreds of compounds. A few carry most of the character. Furaneol smells caramel-like, and it is also part of what makes a strawberry smell like strawberry.2 Maltol adds a sweet, caramel note of its own. Diacetyl, the main butter compound, forms as well. The darker you go, the more bitter and roasted notes build up and the less sweet it tastes. When cream goes in, its proteins brown with the sugar too, in the Maillard reaction. That adds the milky, toasty note of a cream caramel or dulce de leche.
Butterscotch is made by the ingredients. It is cooked less, so more of its flavor comes from what went into the pan. US brown sugar is mostly refined white sugar with molasses added back, and the molasses brings a deeper, slightly bitter cooked-sugar note. Butter brings diacetyl, creamy delta-lactones and a little butyric acid. In studies of cultured butter, those three together were enough to recreate its smell. The name's origin is uncertain. The confection is tied to Doncaster, England, where several firms sold it by 1851.1
Toffee pushes the butterscotch mix further. The higher cook drives off more water and browns more of the sugar and milk solids. You get the same butter, deeper and nuttier, in a glassy texture.
Most butterscotch is built
The butterscotch most people taste is a flavor, not a cook. One widely sold brand of butterscotch baking chips lists sugar, palm kernel oil, milk and nonfat milk first. Butter, caramel color, natural flavor and artificial flavor all come in at 2% or less. There is no brown sugar on the list.3 Translucent butterscotch hard candies are usually flavored with an artificial butterscotch flavor too.1
A flavor house builds butterscotch from a butter note (diacetyl and lactones), a brown sugar or molasses note, a touch of caramel furanone and maltol, and vanilla. Caramel gets more of the furanone and roasted notes, more milk, and less butter. The same butterscotch construct sits behind butterbeer.
Working with them
- The butter note is the dividing line. Too much diacetyl and a caramel reads as butterscotch. Too little and a butterscotch reads as plain brown sugar.
- Ask what replaced the diacetyl. Breathing diacetyl at work has been linked to obliterative bronchiolitis, an incurable scarring of the small airways, in flavoring and popcorn plant workers. Its common substitute, 2,3-pentanedione, has caused similar effects in animal studies.4 Eating it is not the concern. Handling neat butter flavor in your plant is.
- Expect butter top notes to fade in heat. Diacetyl is volatile. In bakery and hard candy, the cook makes some caramel notes of its own but drives off butter notes. See heat stability.
- Caramel notes help when sugar comes out. Maltol and caramel-type notes make a product read sweeter than it is, which is why they turn up in sugar reduction work. They cannot replace the body sugar gave, though.
- Caramel color is not caramel flavor. It is a color additive and adds little taste at normal use levels. A brown drink still needs a flavor.
