Emerging Flavor Profiles

The profiles moving from social novelty toward commercial adoption, tracked across the lifecycle.

How do flavor trends move from social media to retail?

Eighteen to thirty months, from a social video to a national launch. The money is in the middle of that window: early enough to be a decision, late enough to be real.

The path a flavor takes is consistent enough to plan around:

  1. It becomes visible on social. A format or flavor that works in short video.
  2. Small brands launch it. Low volume, fast iteration, lots of versions.
  3. People start searching for it by name.
  4. Trade press notices. It appears in industry media and at trade shows.
  5. A big company launches, usually as a limited edition first.

Stage one to stage five takes eighteen to thirty months.

Launching at stage two is a bet. Launching at stage five is catching up. The useful window is three and four.

Already crowded: pistachio, sweet-heat, Dubai-style filled chocolate.

In the window: pickle and brine, ube, calamansi, hot honey outside snacks.

Still early: savory-leaning dessert flavors, sweet-heat built on something other than sugar, and regional citrus beyond yuzu.
