What Flavor Is Big Red?
A red soda with no red fruit in it, and the clearest case of color steering what people think they taste.
What flavor is Big Red?
Big Red is a cream soda: vanilla, brightened with lemon and orange oils. The red is dye, not fruit, which is why so many people guess bubblegum or cherry.

Big Red was created in Waco, Texas, in 1937 by Grover C. Thomsen and R.H. Roark. It was first sold as Sun Tang Red Cream Soda, and most accounts date the Big Red name to 1969. It sold first in Central and South Texas and around Louisville, Kentucky, and it is still strongest in the South. Keurig Dr Pepper, already a part-owner, bought the rest of the company in 2018.1
It shares a hometown with Dr Pepper, and not much else. It is also caffeinated, which surprises people who file it with fruit sodas.
Why everyone guesses wrong
The color tells your brain to expect red fruit: cherry, strawberry, maybe fruit punch. There is none. Underneath is a vanilla cream soda with lemon and orange oils added.2
Very sweet vanilla, a little citrus and a pink-red color land close to bubblegum and cotton candy. So that is what many people name. Bubblegum flavors are themselves sweet blends of fruit and vanilla notes, so the overlap is real.
This is the same lesson as blue raspberry. Color sets the expectation before anyone tastes anything.
The brand does not help. Its own marketing calls the flavors "deliciously different" and leaves it there. Everything on this page about the citrus comes from tasting and press accounts, not from a published formula.
What carries the flavor
| Note | What usually carries it |
|---|---|
| Vanilla, the "cream" | Vanillin |
| Lemon | Citral |
| Orange | Limonene, plus orange aldehydes such as decanal |
| Body and sweetness | High fructose corn syrup, in the US |
The US label lists natural and artificial flavor, Red 40, citric acid and caffeine. The vanilla is the backbone. The citrus is a lift on top, not a second flavor.
Building a red cream soda
Balance the citrus carefully. Too little and you have a plain cream soda. Too much and it becomes an orange soda that happens to be red.
Lean on the sweetness. Big Red is very sweet, and the vanilla needs it. In a zero-sugar version, tune the vanilla and the sweetener together. Vanilla carries some perceived sweetness of its own, so it can do part of the job.
Expect cold to mute it. Red cream soda turns up in floats, slushes and ice pops. Cold hides aroma, so dose higher than in the soda and judge it frozen. The fat in a float also holds flavor back, a problem covered on our dairy page.
Mind the name. "Red cream soda" is generic. Big Red is a trademark, so your pack needs the generic name.
