Flavor profile
- Family
- Orchard
- Character
- Sweet maraschino-style cherry up front, lemon-lime and orange behind, mild citric acid, faint caffeine bitterness

- Impact
- High
- Typical dosage
- 0.10-0.20% in a full-sugar soda; the citrus part is usually an emulsion
- Heat stability
- Fair; the cherry outlasts the citrus top notes
- pH stability
- Good for the cherry; citral fades over shelf life
- Natural availability
- Natural cherry and citrus flavors are easy to source; a stable natural red is the harder part
Mountain Dew Code Red reached US stores in May 2001. It was the brand's first big move beyond the original flavor. PepsiCo reportedly considered calling it Wild Cherry Mountain Dew, then chose Code Red after focus groups preferred it.1 A diet version followed in 2002. A zero-sugar version replaced it in 2022.
The name tells you nothing about the flavor, which is why people ask. It is cherry.
What you are tasting
Code Red is a flavor extension of the original Mountain Dew, and its label shares most of the same backbone. You get three layers.
Cherry first. A sweet, candy-style cherry. It is closer to a maraschino cherry or a cherry hard candy than to fresh dark cherries.
Dew underneath. Lemon-lime brightness and a juicy orange roundness. The US label lists concentrated orange juice, citric acid and gum arabic, the same backbone as the original.2
Caffeine. 54 mg per 12 oz, the same as regular Dew. It shows up as a faint bitterness in the finish, and it is easier to miss here than in the original.
The only flavor on the ingredient list is "natural flavor". PepsiCo has not said what goes into the cherry, or how much of the original citrus stays. Everything below is how a flavor house would build these notes, not what is in the can.
Why it reads as candy cherry
| Note | What usually carries it in a cherry-citrus soda |
|---|---|
| Candy cherry, with an almond edge | Benzaldehyde |
| Lemon-lime top | Citral and limonene |
| Orange roundness | Orange juice and orange oil (limonene, decanal) |
| Ripe, jammy depth | Fruity esters and a touch of vanillin |
Benzaldehyde is the smell of almond extract and maraschino cherries. One molecule, two readings. That is why Code Red, Dr Pepper and amaretto can remind people of each other.
Fresh-cherry flavors use benzaldehyde lightly and lean on other notes. Soda and candy cherry lean on it hard. Code Red sits firmly on the candy side.
Building a cherry-citrus soda
Decide which flavor leads. Cherry is louder than citrus at the same dose. Start with the citrus base you want, then add cherry until it reads first. Work the other way and the citrus disappears.
Expect the balance to drift. Citral, the main lemon note, breaks down in acid over shelf life. Benzaldehyde is steadier in a sealed can. So an aged sample tastes more of cherry and less of Dew. Judge the balance at the end of shelf life, not only at launch.
Keep the emulsion only if you need it. The gum arabic tells you the citrus oils are carried as an emulsion. Most cherry flavors are water-soluble and do not need one. If you drop the citrus oils, you may be able to drop the emulsion too.
Use the cherry to carry caffeine. Cherry with a little vanilla hides bitterness better than lemon-lime alone. That makes the profile a natural fit for energy drinks, where caffeine runs far higher than 54 mg.
Name it a cherry citrus soda. Code Red and Mountain Dew are PepsiCo trademarks. A flavor house will sell you a "cherry citrus soda type" flavor. Your label needs the generic name.
