What Flavor Is Pibb Xtra?

Coca-Cola's answer to Dr Pepper, with more cherry, more spice and, since late 2025, its old name back.

What flavor is Pibb Xtra?

Pibb Xtra tastes of sweet cherry over a dark, caramel-colored soda base, with a cinnamon-like spice that lingers after you swallow. Coca-Cola now sells it as Mr. Pibb again and describes it as sweet cherry with hints of caramel and a lingering spicy finish.

Coca-Cola launched Mr. Pibb in 1972 to take on Dr Pepper. An earlier test version, sold as Peppo, was dropped after trademark disputes. In 2001 the company reformulated it as Pibb Xtra, a spicier, cherry-forward version that replaced the original in much of the US.1

In late 2025 it changed course again. It brought back the Mr. Pibb name, reformulated the drink and raised the caffeine from about 40 mg to 54 mg per 12 oz. Pibb Xtra is not sold alongside the new Mr. Pibb, and a national rollout was planned for 2026.2 If you are looking for Pibb Xtra now, Mr. Pibb is what replaced it.

What you are tasting

Cherry first. Sweet and candy-like. It is the lead note, not one of many.

Caramel and soft cola spice. The dark base is what makes it read as a "pepper-type" soda rather than a plain cherry soda.

Warmth at the end. A cinnamon-like spice that builds after you swallow.

Coca-Cola calls the drink "intense, sweet cherry flavor with hints of caramel and a lingering spicy finish."3 It has never named the spice. Most tasters read it as cinnamon. The label says only natural and artificial flavors.4

Dr Pepper spreads its flavor across cherry, almond, vanilla and licorice. Pibb narrows it: more cherry, more spice, less of the rest. That is a tasting judgment. Neither company publishes its formula.

Both share the dark caramel base and the phosphoric acid bite of a cola. The spice is what separates them.

Building a spiced cherry soda

Get the cherry right first. Benzaldehyde carries the candy cherry. Too little and the drink reads as a weak cola. Too much and it tips into marzipan or cough syrup.

Add the spice last, in small steps. Cinnamaldehyde, the main compound in cinnamon and cassia, is hot as well as aromatic. A little reads as warmth. A little more reads as cinnamon candy, then as a burn. Our page on Fireball explains why cinnamon burns.

Retune for zero sugar. Mr. Pibb Zero Sugar uses aspartame and acesulfame potassium.4 Sugar softens spice heat, so without it the same spice dose tends to read hotter and the cherry thinner. Rebalance both rather than copying the full-sugar flavor across.

Plan for the caffeine. At 54 mg, there is more bitterness to cover than in most colas. Caramel and spice hide it well in the full-sugar drink. In a zero-sugar version you may need masking support.

Name it a spiced cherry soda. Mr. Pibb and Pibb Xtra are Coca-Cola trademarks. A flavor house will sell you a "spiced cherry" or "pepper-type" soda flavor. On your pack it needs a generic name.
