How do you mask pea protein off-notes?
Pea protein has three separate problems, not one: a green cardboard note from oxidized fat, bitterness from saponins, and cooked notes from processing. Each needs a different fix.
Pea protein is the hardest common protein to flavor, and the reason is that it is not one problem. It is three, and they need three different fixes.
Green, beany, cardboard. Peas contain fat and an enzyme that breaks it down. That reaction makes compounds that smell green and, as they get worse, like wet cardboard. This is the one most people mean when they say "protein taste".
Bitter and drying. Saponins and phenolics — natural compounds in the pea. How much of them is in there varies a lot between varieties and between suppliers, which is why two proteins with identical protein content can taste very different.
Cooked notes. From how the protein was separated and dried. Wet processing gives a cleaner result than dry. More heat in drying means more cooked flavor.
Not all of them work, and the difference is large.

Vanilla is the commercial reality for most ranges and the hardest job on the list. Plan for it: a vanilla plant protein needs a heavier masking system than the chocolate version, and pretending otherwise gives you a range where one product is noticeably worse than the rest.
Two things go wrong.
Too little flavor and you can still taste the base. Plant protein needs more flavor than dairy protein at the same protein level, because the protein grabs onto flavor molecules and holds them back.
Too much flavor gives you something intensely flavored that still tastes bad, because the underlying problem was never touched. If adding more flavor is not making it better, stop. The problem is not coverage.
The fat keeps oxidizing after you have made the product. Something that tasted acceptable at production can develop cardboard notes over six to twelve months, especially in a clear pack with air in it.
Test at real shelf life conditions, not just accelerated ones, and check that the flavor has not faded while the off-note has grown. That combination is what ends up as a bad review.
