Flavor House

By Priya Raman, Product Developer1 min read

What is a flavor house?

A company that makes flavors to order. You send a brief, their flavorists build the flavor, and their application team tests it in your actual product.

Most food and drink brands do not create their own flavors. They write a brief and a flavor house develops against it.

What you get besides the liquid or powder

Application work. This is the genuinely useful part. A flavor judged in water tells you almost nothing. A flavor judged in your actual base, at your pH, through your process, tells you a lot.

Paperwork. How the ingredient statement should read, allergen and GMO status, certifications, and compliance for the countries you sell in.

Stability data, either from their trials or run alongside yours.

Continuity of supply when raw material prices and availability move.

How it usually runs

You send a brief describing the flavor you want, the base, the process, the label rules, your target cost and your volume. They send samples, often several directions. You taste them in your product, give feedback, they iterate. Two to four rounds is normal. Then stability testing, scale-up and a factory trial.

The most common way this goes wrong is an incomplete brief. A house that is not told the product gets retorted will send something that tastes excellent and dies in the autoclave.
