Natural WONF

Natural WONF exists because both ends of the natural spectrum are unsatisfactory for most real products.

A plain natural flavor gives the flavorist a free hand and the lowest cost, but the brand cannot claim the named fruit is doing the work. A from-the-fruit-only flavor supports the strongest claim, but it is expensive, supply is tight, and it is often weaker in the finished product than marketing expects.

WONF sits between them. The named fruit is present and gives the character; other natural ingredients supply impact and staying power.

When it is the right call

• Premium drinks and better-for-you products where a fruit claim matters but the price ceiling is real.
• Fruits whose natural extracts are famously weak — strawberry, watermelon, most berries.
• Products where reliable supply matters more than absolute authenticity.

When it is not

• Harsh processes, where the natural components get destroyed anyway and the premium buys you nothing.
• Products with no fruit claim on the front, where a cheaper natural flavor does the same job.

Ask a supplier what percentage comes from the named fruit and where the supporting components come from. Two quotes with the same designation can differ a lot in how much of the fruit is actually in there.
