Why a full electrolyte load tastes the way it does, and how to keep it drinkable.

How do you mask the taste of electrolytes?

Each mineral tastes different: sodium salty, potassium bitter and metallic, magnesium bitter and drying, calcium chalky. Mask against the exact salts in your formula, not against electrolytes in general.

An electrolyte drink is a harder problem than a flavored water, because the ingredient that makes it work is in there at a level you can taste, and reducing it defeats the product.

Potassium is normally the limiting one. Sodium at hydration levels is manageable, and can even work in your favor — a saline edge reads as functional to people who expect an electrolyte drink to taste of something.

Flavors that suit a mineral base

Some directions work with the base instead of fighting it.

  • Citrus, especially lime and grapefruit. Bitterness is expected, so the mineral bitterness reads as intentional.
  • Tart berry and cherry. They bring their own sharpness and slight dryness.
  • Watermelon and cucumber. They read as hydrating and suit a low-sugar base.
  • Salted versions. Salted watermelon, salted lime — the salt becomes a feature.

What struggles: creamy and dessert flavors, which have nothing in common with the base, and delicate floral ones, which just get buried.

Acid, sweetness and thinness

These drinks are usually low or zero sugar, which removes the two things that would normally carry the flavor.

Acid does more work here than in a sugary drink. Citric gives a fast clean tartness; malic lasts longer, which helps cover the mineral finish.

Sweetener choice interacts with the minerals. Stevia's lingering bitterness and potassium's bitterness make each other worse. A cleaner stevia grade is worth the money in this category specifically. See stevia aftertaste.

Fix the thinness. Soluble fiber, a little allulose, or a mouthfeel ingredient reduces how noticeable everything else is.

Powders have two extra problems

Dissolving. Undissolved mineral particles land on your tongue as concentrated hits. Particle size and how the powder is made both matter, and something that dissolves fully in a shaker may not in a stirred glass.

Separating. Fine flavor powder and coarse mineral salts drift apart in transit, so the first stick from a box and the last one taste different. Match the particle sizes.

Taste it cold, and taste a whole glass

Most of these are drunk very cold, and cold suppresses sweetness and aroma more than it suppresses bitterness. A recipe balanced at room temperature will taste more bitter and less sweet in someone's hand.

Judge at 4–8 °C, over a full serving, made the way people will actually make it.
